"First production region", Luján de Cuyo and Maipú Altitude: 700 to 1000 msnm (2600 to 3300 f.a.s.l.)
HARVEST
Grapes are hand-picked and collected in plastic bins. Harvest is always conducted in the early morning to make sure grapes reach the winery at low temperatures. Grape bunches that do not conform to quality and health standards are immediately discarded while at the estate.
VINIFICATION
Traditional production method in concrete vessels. Pre-fermentative maceration at 10 C for 48 hours. Fermentation at 25 °C, with moderate extraction work, achieving a fresh, fruity wine with a medium structure. Malolactic fermentation 100% complete. 40% of the wine matures for 6 months in used French and American oak barrels. The wine obtained is of medium structure, very fruity and complex due to its maturation in barrels.
TASTING NOTES
Intense red in color, fruity and spicy with hints of mint, typical of the variety, combined with notes of chocolate and vanilla. Unctuous, harmonious, with good structure and lingering finish.
FOOD PAIRING
Roasted red meat, italian food: pizza, lasagna. Grilled vegetables.
