CHARDONNAY
UCO VALLEY, MENDOZA, ARGENTINA
100% Chardonnay.
LOCATION
"First production region" (Uco Valley, Mendoza). Altitude: 800 to 1000 msnm (2600 to 3300 f.a.s.l.)
HARVEST
Grapes are hand-picked and collected in plastic bins. Harvest is always conducted in the early morning to make sure grapes reach the winery at low temperatures. Grape bunches that do not conform to quality and health standards are immediately discarded while at the estate.
VINIFICATION
Reductive winemaking is conducted, keeping oxygen away, to prevent aroma loss. Once grapes arrive at the winery, whole bunches are gently pressed to avoid extraction of phenolic material. The juice is sent to a stainless-steel tank, where it is cooled down to 8℃ (46°F) for 24 hours. It is later transferred to another tank, where selected yeasts are added and fermentation occurs at 12℃ (54 °F) during 30 days. 40% of the wine is aged in used French and American oak barrels for 4 to 6 months.
TASTING NOTES
Tropical fruit notes, such as pineapple and white peach, combined with green apple. This wine displays great varietal character and freshness. It has a medium structure.
FOOD PAIRING
Seafood, white fish, pasta with herbal seasonings, and fresh vegetable salads.
