HARVEST
Grapes are hand-picked and collected in 12-kilogram (26-pound) bins, by stages within the same estate barracks. Harvest is always conducted in the early morning to make sure grapes reach the winery at low temperatures. Grape bunches that do not conform to quality and health standards are immediately discarded while at the estate.
VINIFICATION
This wine is produced through diverse winemaking techniques. Fermentation occurs in concrete vats, with microvinifications in smaller vats. Most microvinifications involve co-fermentation of both varieties. Once the fermentation process is complete, fifty percent of the wine is aged in used oak barrels for 10 to 12 months, where malolactic fermentation occurs. This is a wine of great structure, aromatic intensity, and complexity.
TASTING NOTES
Predominant aromas of fresh cherries and strawberries, typical of local Malbec, combined with herbal and floral notes such as violets. On the palate, black fruits stand out, with a vibrant and intense character, as well as some citrus notes with fine and round tannins.
FOOD PAIRING
Red meats, lamb, zesty pastas, roasted vegetables and grilled foods in general.
