Valle de Uco-Mendoza.

HARVEST

Grapes are hand-picked and collected in 12-kilogram (26-pound) bins, by stages within the same estate barracks. Harvest is always conducted in the early morning to make sure grapes reach the winery at low temperatures. Grape bunches that do not conform to quality and health standards are immediately discarded while at the estate.

VINIFICATION

100% fermented with indigenous yeasts. Traditional winemaking conducted in concrete vats for 20 days at low temperatures between 22°C and 24°C (72-75°F) to obtain higher aromatic intensity. Extraction activities are carried out manually, producing a wine of good structure. Fifty percent of the volume is aged in used French and American oak barrels for 8 to 10 months, where malolactic fermentation occurs. The result is an intense, balanced wine of great freshness and aromatic complexity.

TASTING NOTES

Aromas of lavender, rosehip, fresh blueberry and plum. It is a medium-bodied wine with fine-grained tannins and bright acidity. Succulent and savory.

FOOD PAIRING

Red meats, lamb, zesty pastas, roasted vegetables and grilled foods in general.
